Our Hollandaise Sauce is a tried and true recipe that can elevate any meal! Our version is simple and quick to make in a blender which does not require laborious whisking or the use of a double boiler. INGREDIENTS

50 grams (about 3 large) Egg Yolks
30 grams (2 tablespoons) Lemon Juice
1/8th teaspoon Salt
Optional: pinch of Cayenne Pepper
120 grams (1 stick plus 1 tablespoon) Butter

DIRECTIONS

1Melt the butter to bubbling stage, do not brown. Set aside and allow it to cool slightly.
2Add the egg yolks, lemon juice, salt and pepper to a blender. Blend on high until light and frothy.
3Lower the blender speed to low then remove the lid and pour the butter over the eggs in a steady stream while blending - about 30 seconds. The sauce should emulsify and thicken.
4Weigh out the amount indicated in the snack above. Serve over fried eggs (Eggs Benedict), or over cooked asparagus, fish or meat.
