A cookies that goes by many names and beloved by so many different cultures must be delicious. Russian Tea Cakes, Mexican Wedding Cookies, Butter Balls. These are all names for the same cookie more or less, but no matter what you call them, they are perfection. Our keto adapted version, which we named Keto Snowball Cookies, remains true to the classic recipe swapping almond flour for regular flour and a low carb powdered sweetener for the confectioners sugar. Simple!

You will need to pay attention to the temperature of the butter prior to baking. The dough will appear too soft to roll just after mixing, but just a few minutes in the refrigerator is enough to make these easier to handle. They bake up beautifully and do not need the sugar coating if you prefer a less sweet option. They are just as tasty without it.

INGREDIENTS

1 1/2 cups (150 grams) walnuts, finely chopped
1 cups (100 grams) almond flour
1 stick (114 grams) butter
1 large (50 grams) egg
1 teaspoon (2.5 grams) vanilla extract
Optional: Powdered low carb sweetener

DIRECTIONS

1Using a food processor, chop the walnuts until fine. Measure 1 cup. Remove any extra walnuts from the food processor.
2Combine all ingredients, including a small amount of sweetener if desired, in the food processor and pulse until well combined. The dough may be very soft depending on the temperature of you butter. If it is too soft to roll, refrigerate until it is firm enough.
3Roll the dough into small rounds, about the size of a quarter. Place on a parchment lined baking sheet. Bake in the oven at 350 degrees for about 12 minutes. They are done when slightly browned and beginning to crack on the top.
4Allow the cooked cookies to cool for about 10 minutes. Roll the cookies in powdered low carb sweetener until completely coated. Store in an air tight container.
