These are all names for the same cookie more or less, but no matter what you call them, they are perfection. Our keto adapted version, which we named Keto Snowball Cookies, remains true to the classic recipe swapping almond flour for regular flour and a low carb powdered sweetener for the confectioners sugar. Simple!
You will need to pay attention to the temperature of the butter prior to baking. The dough will appear too soft to roll just after mixing, but just a few minutes in the refrigerator is enough to make these easier to handle. They bake up beautifully and do not need the sugar coating if you prefer a less sweet option. They are just as tasty without it.
