- 200 g zucchini, grated and squeezed to remove moisture
- 100 g eggs (2 large eggs)
- 50 g almond flour
- 1.5 g garlic powder (1/2 tsp)
- 1.5 g onion powder (1/2 tsp)
- 1.5 g salt (1/4 tsp)
- 1 g black pepper (1/4 tsp)
- 30 g shredded cheddar cheese
- 80 g coconut oil (for frying)

- Prepare the Vegetable Base:
- Grate the zucchini and place it into a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible.
- Mix the Ingredients:
- In a mixing bowl, combine the grated vegetables, eggs, almond flour, garlic powder, onion powder, salt, black pepper, and shredded cheddar cheese. Mix until the mixture holds together when pressed.
- Heat the Oil:
- Heat oil in a skillet over medium-high heat.
- Shape and Fry the Latkes:
- Scoop about 30 g (2 tablespoons) of the mixture, shape it into a small patty, and place it gently into the hot oil.
- Flatten slightly with a spatula for even cooking.
- Fry for 2–3 minutes on each side or until golden brown and crispy. Work in batches to avoid overcrowding. The latkes should first bubble as the moisture evaporates, then begin to absorb some of the cooking oil.
- When all the mixture has been cooked, scrape the pan well and pour any remaining oil over the cooked latkes to maintain the correct ratio.
- Drain and Serve:
- Transfer the cooked latkes to a plate to cool.
- Serve warm and enjoy!

- Using the cheese helps hold the latkes together when they cool. It can be omitted if desired.
- Make a higher fat dipping sauce by mixing sour cream with additional oil to meet ratio needs.
