Sunflower Seed Surprise Cookies really do have a fun “surprise” inside! This very simple recipe produces a soft, slightly chewy cookie that everyone will love. It’s nut free making it an ideal option for school. So what is the surprise? After baking the cookies, you will notice that the interior turns green! This is a completely natural and harmless reaction. According to the SunButter website, “The chlorogenic acid (chlorophyll) in sunflower seeds reacts with the baking soda/powder when baked, causing the green color when the cookies cool. Make this your St Patrick’s Day treat!

INGREDIENTS

50 grams or 1 large egg
100 grams or 3/4 cup sugar free sunflower seed butter
16 grams or 1 rounded tablespoon coconut oil
Optional - 12 grams or 1 Tablespoon Truvia
2 grams or 1/2 teaspoon vanilla extract
1 gram or 1 pinch baking powder
1 gram or 1 pinch baking soda
1 pinch salt

DIRECTIONS

1Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
2Combine all the ingredients and stir well to evenly distribute.
3Roll the batter into 12 ball shapes about the width of a quarter, flatten with the back of a fork or spoon the batter into 12 equal portions instead of rolling. Depending on the temperature of the sunflower seed butter, the batter may be more loose and spoonable. This is ok!
4Bake the cookies in the upper portion of the oven for 7-9 minutes. Watch closely for browning, the cookies will burn very fast! They are finished when fully risen and firm in the center.
5Allow the cookies to cool for several hours. The green color will develop as they cool. They will continue to turn darker green as they sit, so it is best to cook one batch at a time.
