A delicious, mildly sweet candy requires only one ingredient, coconut butter. Coconut butter is simply the blended meat of a coconut. Some manufactures label this as “Coconut Manna”. Before you can make candy, check to see if the coconut fat has seprated and risen to the top of the jar; if so, you will need to melt the contents of the jar to re-emulsify it. After you have re-mixed the contents you are ready to pour it into candy molds (or you can allow it harden and melt it later). To avoid burning, melt a chunk in a silicone egg poaching cup over a mug warmer. The silicone cup is flexible and will allow you to easily pour the melted coconut butter into candy molds.

DIRECTIONS

1Melt the coconut butter gently just until it is a creamy peanut butter consistency; be careful not to burn it.
2Pour or spoon into candy molds.
3Refrigerate at least 10 minutes to harden. Refrigerate for up to several weeks in a closed container.
