Coconut Milk & Chia Seed Pudding
YIELD: 2 Servings
MACRONUTRIENT RATIO: 3:1
100gm full fat coconut milk
15gm chia seeds (white chia seeds were used in the recipe pictured, regular chia seeds are exactly the same!)
0.2gm ground cinnamon
tiny pinch of salt, water for thinning consistancy if desired
1Mix all ingredients together very well. The mixture will be very thin.
2Cover the pudding with plastic wrap or a lid and let it rest in the refigerator for at least 2 hours.
3After 2 hours, stir the pudding. The chia seeds should have swelled and softened. The pudding will be a much thicker consistancy. Thin with water if needed.
4Serve cold or warm!
