Kofta Kebabs are a delicious combination of meat and warm spices that make a great addition to your regular meal rotation. They have a long list of spices, but if you decide you enjoy these flavors, you can streamline the process by premixing a larger quantity of equal parts nutmeg, sumac, allspice, and cardamom and adding 4 teaspoons of the spice combination to the meat when you decide to have this for dinner. This entree pairs very well with our Tzatziki Sauce!

INGREDIENTS

454 grams (1 pound) 85% ground beef
454 grams (1 pound) ground lamb
80 grams (1/2 cup) copped yellow onion
60 grams (1 cup) chopped fresh parsley
6 grams (2 cloves) chopped fresh garlic
5 grams (1 teaspoon) ground nutmeg
5 grams (1 teaspoon) sumac
5 grams (1 teaspoon) ground green cardamom
5 grams (1 teaspoon) ground allspice
salt/pepper

DIRECTIONS

1Pre-soak 16 wooden skewers in water for at least 1 hour prior to grilling.
2Combine all ingredients in a large mixing bowl. Using your hands, fold the spices and herbs into the meat mixture until very well combined.
3Divide the meat mixture into 1/4 cup portions (about an average handful of the meat mixture) and press onto the skewer in a log shape.
4Grill the kebabs until completely cooked through or until the internal temperature reaches 160 degrees. Remove the kebabs from the grill, cover with foil and allow them to rest for at least 5 minutes prior to serving.
5Serve with grilled vegetables and our Tzatziki Sauce for a delicious meal.
