Mini Pizza Bites
MACRONUTRIENT RATIO: 4.47:1
18 grams mayonnaise
15 grams raw egg, mixed very well
8 grams coconut oil, melted
7g almond flour, Bob’s Red Mill
4g coconut flour, Bob’s Red Mill
2 grams psyllium husks (whole or powdered)
0.5g baking powder
0.5g baking soda
1Pre-heat the oven to 400 degrees.
2Combine all ingredients and mix very well. Make sure there are no lumps of coconut flour.
3Let the dough sit for 5 minutes to stiffen.
4Using your hands, roll the dough into 3-4 small balls. About 1 inch in diameter.
5Line a baking sheet with parchment paper. Place the dough on the parchment and press into small, flat pizza crust shapes. Put toppings on the raw dough and bake for 7-9 minutes.
6Notes: Use any toppings you like! Pesto, olives, and pre-cooked veggies are great ideas. Try something outside of pizza flavors like cream cheese, shredded chicken and buffalo sauce. After baking, the crust will be soft. If you like a crispier crust, reheat them in a non-stick skillet until the bottom has crisped up. Turn off the heat and cover the skillet with a lid to help the cheese melt on top.
