Beautiful, bite size fall treats make for an impressive presentation and a unique way to enjoy apples. Creating the apple flowers is easier than it looks. The flowers combined with Ketogenic Caramel Sauce is a truly decadent dessert.
1 batch of Ketogenic Caramel Sauce
Use at least 50g each of butter and heavy cream to ensure enough caramel sauce.
1 red apple
1Slice the apple vertically just to the side of the core, avoiding any seeds. Use a mandolin on the thinnest setting or a very sharp knife to slice the seedless half of the apple into very thin slices.
2Place the apple slices into a small bowl and cover with water. Microwave the apples in the water for about 1 minute or until the slices are pliable and can be bent or rolled without breaking.
3Remove the apple slices from the water and dry them between 2 paper towels.
4Use foil or parchment liners to a few wells of a mini muffin tin. Use a spoon or syringe to fill each liner with 15 grams of prepared and slightly cooled caramel sauce.
5Weigh 15 grams or approximately five to six apple slices. Lay three to four apple slices in a row, overlapping the pieces by about half of the length. Begin to roll the center of the apple flower, creating a tight spiral. Place the apple flower into the caramel sauce and gently pull the “petals” apart. Add the remaining slices to the outside of the flower being sure to follow the direction of the center petals.
6Make sure all the petals are pressed into the caramel sauce.
7Place the muffin tin into the refrigerator to allow the caramel to harden. Once set, remove the flower form the liner and enjoy!
