Our Cauliflower Hummus recipe is a 2:1 ratio or “Modified Keto”, suitable for all ranges of Ketogenic Therapies. The Modified Ketogenic Diet is a less restrictive version of classic Keto, and can be helpful when starting the diet, or when tapering down to a less restrictive, long term diet. Carrying a macronutrient ratio between 2:1 -1:1, the diet is designed with flexibility in mind to increase compliance and decrease potential digestive discomfort and nutrient deficiency that can occur with long term classic keto eating.
PREP TIME: 10 minutes
COOK TIME: 40 minutes
YIELD: 2 cups
MACRONUTRIENT RATIO: 2:1 1 Tablespoon = 41 Calories
KETO DIET PLANS: Classic Keto, Modified Keto, Modified Atkins, Low Glycemic Index, and MCT Oil
1 small head (440gm) cauliflower
1 clove (3gm) garlic
1/3 cup (163 gm) tahini
1 Tablespoon (15 gm) fresh lemon juice
¼ cup Tablespoons (56gm) avocado oil
Pinch of sea salt
1Break the cauliflower into small pieces and toss with the olive oil. Place on roasting pan and bake at 375 F for 40 minutes, tossing after 20 minutes to evenly bake. Allow to cool.
2Combine roasted cauliflower and remaining ingredients in a blender and blend until smooth. Store in a container with tight lid and use within 1 week.
