100 grams (3/4 cup) grated carrots
224 grams (1 cup) melted coconut manna
114 grams (1/2 cup) salted butter, room temperature
114 grams (1/2 cup) cream cheese, room temperature
28 grams (2 tablespoons) flax meal
117 grams (1 cup) chopped walnuts
5 grams (2 teaspoons) cinnamon
Optional: 1 packet Truvia or liquid stevia to taste
1Using a food processor, combine the grated carrots, coconut manna, butter, cream cheese and flax meal. Pulse until the ingredients are well combined. If you are using an optional sweetener, add it during this step.
2If the mixture is too soft to roll into balls, place it in the refrigerator until it can easily be handled. Line a baking sheet with parchment or wax paper. Roll the entire batch into approximately 45 1 inch balls. Place them on the lined baking sheet in a single layer.
3Sprinkle the walnuts and cinnamon over the rolled carrot cake bites. Using the edges of the paper, toss until they are evenly coated. Carefully press the coating into the bites so it adheres well. Store the finished fat bombs in an airtight container in the refrigerator.
